Moroccan food is very rich and diverse due to the country’s interaction with such a variety of cultures over the years. A classical, famous dish in Morocco is Tajine, this is a low-cooked stew consisting of cuts of meat (chicken, beef) which become tender the longer cooked, most likely flavoured with olives, fruits, nuts, lemons and species including cinnamon, ginger, paprika, coriander and saffron. In Morocco each tribe has their own way of cooking tajine, and most keep it a secret, with the variant taste depending on the fruits and vegetables available in that area. Tajine is believed to be a ‘gift from God’, that is why Moroccans share the dish with family and friends.
If you are considering making this dish at home, it may take a little bit of practice to perfect but the smell a combination of fruits and other ingredients is incredible. To finish it off serve with bread, couscous, or harissa.
